Michael McCarthyMichael McCarthy is Professor and Engineer in the Department of Food Science and Technology, Chair of the Department of Food Science and Technology and Professor of Engineering in the Department of Biological and Agricultural Engineering at the University of California, Davis. He also serves as a member and principle investigator for the Center for Process Analysis and Control at the University of Washington, an industry – university research consortium.

The goals of his research program are to understand and quantify transport phenomena during food processing and to develop of process analytical technology for the food industry. In 1990 Michael was selected as a National Science Foundation Presidential Young Investigator for his work in developing magnetic resonance imaging to study transport phenomena in food processing. Michael has worked extensively with industry and NGO’s during his academic career including a sabbatical with Nestle in 1996-1997 and a sabbatical with Aspect AI/Paramount Citrus Association in 2007. Michael teaches courses in food processing, food properties and analytical sensor technologies at UC Davis.
