Gustavo V. Barbosa-Cánovas, Fulbright Fellow, Professor of Food Engineering and Director of the Center for Non-Thermal Food Processing (CNPF) at Washington State University, United States of America, and Honorary Doctor of Philosophy at the Polytechnic University of Cartagena, Spain. Research interests include Advanced technologies of food preservation, Food Dehydration, Physical Properties of food products. He is the editor-in-chief of the Food Engineering Reviews magazine, Springer's Food Engineering book series, and CRC Press's Food Conservation book series. He has received several international awards, such as the IFT Nicolas Appert Award, the IFT International Prize, has been an artist of IFT, IFST, JSPS and IUFoST, as well as a member of the Uruguayan Academy of Engineering and the Mexican Academy of Sciences.
