Special Session 5: Food fortification technologies for a globalized world

Purpose: The production of nutritionally valuable foods often involves fortification with a variety of micronutrients and nutraceuticals. The prevention of the deterioration of these through interactions with the food or with other additives presents interesting engineering challenges. The purpose of this session is to discuss these challenges.
